Method

1 Cut sausage in 3 ounce pieces, then in half, lengthwise. Grill on 375 F. griddle until thoroughly cooked and browned. Turn
frequently to ensure even browning. CCP: Internal temperature must reach 145 F. or higher for 15 seconds.
2 Place 2 pieces sausage in each hot roll. Hold for service at 140 F. or higher.
